Les Monts Fournois 是 Juliette Alips 所建立的新世代 Champagne project
她受兩位表親 Raphaël 與 Vincent Bérêche 指導，並在 Louis Latour、G.D. Vajra、Roederer Estate 等酒莊累積釀酒經驗
 
Aÿ 位於 Vallée de la Marne，但在 Champagne 的 Grand Cru 分級中屬於非常重要的 Pinot Noir 產區
當地葡萄園多為陡峭朝南的坡地，具有白堊質、石灰質土壤，能讓 Pinot Noir 同時取得成熟度與酸度
 
這款「Vallée」的定位，就是希望把 Aÿ Pinot Noir 的力量、成熟果味與礦物張力表現出來
 
2015 年裝瓶進行二次發酵，於瓶中酒泥熟成約八年後於 2023 年除渣
